In the 1970s, the Microbiology Department at Oregon State University isolated the bacteria that gives San Francisco sourdough its unique flavor. They named it lactobacillus san Francisco. Reusable- by reserving a bit from each batch, you can continue to make San Francisco sourdough indefinitely!
