Wow, This is like nothing else I have ever tried. This Kimchi has the base of a soy sauce brine. I then use red Asian dates, chestnuts, Shiitake as well as the amazing Asian pear. You then get all the other goodness you expect from any other kimchi like ginger and garlic and cabbage.
I think this would make a bowl of amazing fried rice. I have not gotten a chance to try it yet but it's in the works for next week. I will post an update.
This would also make an amazing sandwich either vegan or with roast beef.
