Its that cold and flu season again. Its time to start thinking about boosting our immune systems again.

Kimchi Ramen Stew
1 tablespoon sesame oil
1 cup sliced scallion
6 cloves garlic
2 big thumbs of ginger
1 large zucchini
3 cups soup stock
1 tablespoon soy sauce
1 cup kimchi
1/2 block tofu or protein of your choice
1 teaspoon honey
3 tablespoons sesame oil
3 tablespoons rice wine vinegar
1 tablespoon korean red pepper flakes
1 package of Ramen noodles of your choice
1. begin by prepping vegetables.
2. Heat a deep pot with sesame oil. Add scallions,garlic,ginger and zucchini. Sweat for 15 to 10 mins.
3. Next add soy sauce, extra sesame oil,kimchi,sugar, rice wine vinegar and Red pepper chili flakes. Stir till combined.
4. Add your broth and let simmer for 20 - 30 mins. Add in your ramen and cook fro 3 mins. Serve with you favorite toppings.
